Origins

One country, many climates.

Peru runs from Pacific desert to Andean peaks to Amazon rainforest. We go to the one place where each product grows at its best.

Coffee · Cajamarca

From the highlands to your cup.

    The farm

    Smallholder families in Cutervo and San José de Lourdes grow Typica, Caturra and Bourbon at 1,750–1,800 m.

  2. II

    Picked by hand

    Only ripe red cherries are picked, pass after pass through the harvest.

  3. III

    Washed and sun-dried

    The cherries are pulped, fermented, washed and dried slowly in the sun.

  4. IV

    Cupped and scored

    Every lot is tasted by a quality specialist. Ours scored 86 on the SCA scale.

  5. V

    Roasted

    A medium-dark roast for espresso: dark chocolate, praline, orange peel.

  6. VI

    Sealed and sent

    Packed in our illustrated bag and sent to your door.

From the pod to the bar.

    The cacao

    Cacao grown in the Cusco region of southern Peru.

    Harvested

    Ripe pods are opened by hand and the beans taken out.

  3. III

    Fermented and dried

    The beans ferment, then dry in the sun to develop their flavour.

  4. IV

    Roasted and ground

    Roasted, cracked and ground slowly into chocolate.

  5. V

    Tempered and moulded

    Tempered and set into 90 g bars.

  6. VI

    Boxed and sent

    Each bar goes into its own illustrated box, then to your door.

    Olive groves in the desert valleys of Tacna, in Peru's far south.

    Picked by hand

    Ascolana olives are picked by hand at the right moment.

    Cold pressed

    Pressed cold to keep the green fruit, the almond and the gentle pepper.

    Rested

    The oil rests and settles before it is bottled.

    Bottled in glass and sealed.
